Steps
1. Preheat the oven to 400°F (200°C).
2. Season the chicken breast with salt and pepper, then grill it until cooked through. Slice into thin strips.
3. In a frying pan, heat 1 tsp of olive oil over medium heat. Add the onions and peppers, and sauté until they are softened.
4. In another frying pan, heat the remaining olive oil over medium-high heat. Add the sliced potatoes and cook until crispy and golden brown.
5. Assemble the sandwich by placing the grilled chicken, sautéed onions, and peppers on one slice of bread. Sprinkle the shredded cheese on top, then cover with the other slice of bread.
6. Place the sandwich in a preheated panini press or grill pan and cook until the cheese is melted and the bread is toasted.
7. Serve the sandwich on a plate lined with the crispy potatoes.
