1. Preheat your oven to 180°C (350°F). 2. Cut the top off the bell pepper and remove the seeds. 3. In a skillet, heat olive oil over medium heat, then add the chopped onion and garlic. Sauté until fragrant. 4. Add the minced meat to the skillet, season with paprika, salt, and pepper, and cook until browned. 5. Remove from heat and stir in half of the shredded cheese. 6. Stuff the bell pepper with the mincemeat mixture, packing it tightly. 7. Place the stuffed pepper in a baking dish and sprinkle the remaining cheese on top. 8. Bake in the preheated oven for about 25-30 minutes, or until the pepper is tender and the cheese is melted and bubbly. 9. Garnish with chopped parsley before serving.
