1. Preheat your oven to 180°C (350°F). 2. Cut the top off the bell pepper and remove the seeds. 3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until soft. 4. Add the mincemeat and cook until browned, seasoning with paprika, salt, and pepper. 5. Remove from heat and mix in half of the cheese. 6. Stuff the mixture into the bell pepper and place it in a baking dish. 7. Top with the remaining cheese. 8. Bake for 25-30 minutes until the pepper is tender and the cheese is bubbly. 9. Garnish with fresh parsley before serving.
