Steps
1. Heat a non-stick pan over medium heat.
2. In a bowl, beat the eggs and season with salt and pepper.
3. Add the diced potatoes to the pan and cook until golden brown and crispy.
4. Meanwhile, toast the bread slices and spread minced garlic on one side of each slice.
5. Once the potatoes are cooked, remove them from the pan and set aside.
6. Place one slice of bread, garlic side up, in the pan.
7. Sprinkle half of the grated cheese on top of the bread.
8. Add the cooked potatoes on top of the cheese.
9. Pour the beaten eggs over the potatoes.
10. Place the second slice of bread, garlic side down, on top of the eggs.
11. Cook the omelette for a few minutes until the bottom is golden brown.
12. Carefully flip the omelette using a spatula and cook the other side until golden brown.
13. Remove from heat, cut into slices, and serve hot.
