Steps
1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix the chopped spinach, cream cheese, mozzarella cheese, minced garlic, salt, and pepper until well combined.
3. Carefully slice a pocket into the side of the chicken breast and stuff it with the cheese and spinach mixture.
4. Secure the opening with toothpicks if necessary.
5. Season the outside of the chicken with salt, pepper, and paprika.
6. Heat olive oil in an oven-safe skillet over medium-high heat.
7. Sear the stuffed chicken breast for 3-4 minutes on each side until golden brown.
8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
9. Let it rest for a few minutes before removing toothpicks and slicing to serve.
