Steps

2. Carefully slice a pocket into the side of the chicken breast.
3. In a small bowl, mix shredded mozzarella, chopped spinach, and minced garlic.
4. Stuff the cheese and spinach mixture into the chicken pocket.
5. Secure with toothpicks if needed.
6. Rub the chicken with olive oil, then season with salt, pepper, and Italian herbs.
7. Place chicken on a baking tray and bake for 25-30 minutes until cooked through and cheese is melted.
8. Let rest for 5 minutes before serving.
