
Steps
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Season the chicken breast with salt, pepper, and garlic powder. Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil and sauté the diced potatoes until golden and crispy, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the broccoli florets and sauté until tender-crisp, about 3-4 minutes.
- Slice the cooked chicken into thin strips and return it to the skillet with the broccoli.
- In a small bowl, mix together the soy sauce and oyster sauce. Pour the sauce over the chicken and broccoli, stirring well to coat.
- Cook for another 2-3 minutes until the sauce has thickened slightly.
- Serve the chicken and broccoli stir-fry over a bed of fluffy rice, alongside the roasted potatoes.
