Steps
1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
2. Season the chicken breast with salt, pepper, and garlic powder. Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
3. In the same skillet, add another tablespoon of vegetable oil and sauté the diced potatoes until golden and crispy, about 8-10 minutes. Remove from the skillet and set aside.
4. In the same skillet, add the broccoli florets and sauté until tender-crisp, about 3-4 minutes.
5. Slice the cooked chicken into thin strips and return it to the skillet with the broccoli.
6. In a small bowl, mix together the soy sauce and oyster sauce. Pour the sauce over the chicken and broccoli, stirring well to coat.
7. Cook for another 2-3 minutes until the sauce has thickened slightly.
8. Serve the chicken and broccoli stir-fry over a bed of fluffy rice, alongside the roasted potatoes.
