Chicken Olive Potato Sandwich

Steps

1. Preheat the oven to 350 F. 2. Wash and cube the potatoes. 3. Place them on an oven tray, add olive oil, salt, and pepper, and mix. 4. Bake in the oven for 20-25 minutes. 5. Meanwhile, add a bit of olive oil to a pan and cook the chicken until browned, and its juices run clear. 6. Slice the chicken into thin slices. 7. Lightly toast the flatbread or bread. 8. Assemble the sandwich: spread a thin layer of mayo on the toast, top with chicken and potatoes slices, and top with the olives. 9. Enjoy!
