
Steps
- Preheat the oven to 350 F.
- Wash and cube the potatoes.
- Place them on an oven tray, add olive oil, salt, and pepper, and mix.
- Bake in the oven for 20-25 minutes.
- Meanwhile, add a bit of olive oil to a pan and cook the chicken until browned, and its juices run clear.
- Slice the chicken into thin slices.
- Lightly toast the flatbread or bread.
- Assemble the sandwich: spread a thin layer of mayo on the toast, top with chicken and potatoes slices, and top with the olives.
