Chocolate Glazed Carrot and Onion Omelette

Steps

1. Heat olive oil in a skillet over medium heat. 2. Add diced onions and cook until translucent. 3. Add grated carrot and diced tomato, cook until softened. 4. In a bowl, beat eggs with salt and pepper, then pour over the vegetables in the skillet. 5. Cook the omelette until set, then sprinkle chopped dark chocolate on one half. 6. Fold the omelette in half to cover the chocolate, and cook for another minute until the chocolate melts. 7. Serve hot and enjoy!
