Steps
1. In a bowl, mix the orange juice, zest, honey, soy sauce, olive oil, salt, and pepper to create the glaze.
2. Marinate the chicken breast in the glaze for at least 30 minutes.
3. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked.
4. While the chicken cooks, prepare the salsa by combining the chopped red onion, cilantro, jalapeño (if using), and the remaining orange segments in a bowl. Season with salt to taste.
5. Once the chicken is cooked, let it rest for a few minutes before slicing.
6. Serve the sliced chicken on a bed of lettuce, topped with the orange salsa.
