Steps
1. Preheat the oven to 375°F.
2. Place the cod filet on a lightly oiled backing sheet.
3. In a small bowl mix together the coconut flakes, olive oil, salt and pepper then spread the mix over the top of the cod.
4. Bake for 15 minutes.
5. Meanwhile, break the cauliflower into florets then put them into a bowl.
6. Drizzle the melted butter, garlic, chili powder, thyme and a pinch of salt over the cauliflower then toss until everything is fully coated.
7. Place the cauliflower onto a separate baking sheet and bake for 25 minutes.
8. Serve the roasted cauliflower with the coconut cod and enjoy!
