Coconut Curry Chicken

A rich and flavorful coconut curry dish with tender chicken and aromatic spices.

Steps

1. In a bowl, toss the diced chicken breast with curry powder until evenly coated. 2. Heat the vegetable oil in a large pan over medium heat. Add the onion and garlic and sauté until fragrant. 3. Add the chicken to the pan and cook until browned on all sides. 4. Add the red bell pepper and carrot to the pan and cook for another 2-3 minutes. 5. Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir well to combine. 6. Reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender. 7. Serve the coconut curry chicken over steamed rice and garnish with fresh cilantro.
