Steps
1. In a bowl, mix the cooled brewed coffee, soy sauce, brown sugar, garlic powder, black pepper, and salt to create the glaze.
2. Marinate the chicken thighs in the coffee mixture for at least 30 minutes (or up to overnight in the fridge for deeper flavor).
3. Heat olive oil in a skillet over medium heat.
4. Remove the chicken from the marinade, reserving the marinade for later.
5. Sear the chicken thighs skin-side down for about 5-7 minutes until golden brown.
6. Flip the chicken, pour the reserved marinade over, and cover the skillet.
7. Cook for another 10-15 minutes, basting occasionally, until the chicken is cooked through (internal temperature should reach 165°F/75°C).
8. Remove from heat and let rest for a few minutes before serving.
