Steps

1. Preheat the oven to 375°F (190°C). 2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the herb mixture all over the rabbit leg. 4. In a baking dish, place the chopped carrot and potato, then lay the rabbit leg on top. 5. Pour vegetable broth into the dish, covering the vegetables. 6. Cover the dish with foil and roast in the oven for 45 minutes. 7. Remove the foil and roast for an additional 15 minutes to brown the rabbit. 8. Let rest for 5 minutes before serving with the roasted vegetables.
