Steps
1. In a small bowl, mix the brewed coffee, olive oil, garlic powder, smoked paprika, salt, and pepper to create a marinade.
2. Place the chicken breast in a resealable plastic bag or shallow dish and pour the marinade over it, ensuring it’s well-coated. Marinate for at least 30 minutes (or up to 2 hours in the fridge).
3. Preheat a skillet over medium heat. Remove the chicken from the marinade and discard the excess liquid.
4. Cook the chicken breast for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F/75°C).
5. Let the chicken rest for a few minutes before slicing. Garnish with fresh parsley if desired, and serve warm.
