Corn and Mushroom Oatmeal Fritters

Steps

1. In a mixing bowl, combine corn kernels, diced mushrooms, oatmeal, egg, salt, and black pepper. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Take spoonfuls of the mixture and drop it onto the skillet, flattening it slightly to form fritters. 4. Cook for 3-4 minutes on each side, or until golden brown. 5. Remove from the skillet and drain on a paper towel to remove excess oil. 6. Serve hot and enjoy!
