Steps
1. Cook pasta according to package instructions until al dente. Drain and set aside.
2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
3. Add diced bell pepper and zucchini, cooking until softened, about 3-4 minutes.
4. Stir in crushed tomatoes and bring to a simmer. Cook for 5 minutes.
5. Reduce heat and stir in heavy cream and chopped spinach. Season with salt and pepper.
6. Toss the cooked pasta in the sauce until well coated.
7. Serve hot, topped with grated Parmesan cheese if desired.
