Steps
1. In a small saucepan, combine the rice milk and arborio rice.
2. Bring to a gentle simmer over medium heat, stirring occasionally.
3. Once it starts to simmer, reduce the heat to low and cover. Cook for about 20 minutes or until the rice is tender.
4. Stir in the maple syrup, vanilla extract, and a pinch of salt.
5. If you want a thicker pudding, dissolve the cornstarch in a little cold rice milk and add it to the mixture. Cook for an additional 2-3 minutes until thickened.
6. Remove from heat and let it cool slightly.
7. Serve warm or chill in the refrigerator for a more refreshing dessert.
8. Sprinkle with cinnamon before serving.
