Steps
1. Start by grating the courgette and place it in a clean kitchen towel to squeeze out excess moisture.
2. In a mixing bowl, combine the grated courgette, grated halloumi, egg, flour, parsley, salt, and pepper. Mix well until a thick batter forms.
3. Heat olive oil in a non-stick pan over medium heat.
4. Scoop out tablespoons of the mixture and flatten them slightly to form cakes.
5. Cook the cakes for about 3-4 minutes on each side or until golden brown and crispy.
6. Once cooked, drain on paper towels to remove excess oil and serve warm.
