Steps
1. Rinse the quinoa under cold water and place it in a small saucepan with the water and a pinch of salt.
2. Bring the water to a boil over medium heat, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
3. While the quinoa cooks, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
4. Once the quinoa is cooked, remove it from heat and stir in the melted chocolate, maple syrup, and vanilla extract until well combined.
5. Serve the chocolate quinoa in a bowl, topped with fresh berries and chopped nuts if desired.
