
Steps
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the dark chocolate and cream cheese until well combined.
- Carefully make a pocket in the chicken breast by slicing it horizontally, being careful not to cut all the way through.
- Stuff the chocolate mixture into the pocket of the chicken breast and secure it with toothpicks.
- Season the outside of the chicken breast with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear the chicken breast for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
- Remove from the oven, let it rest for a few minutes, then garnish with fresh thyme and serve.
