1. In a pan, melt 1 tablespoon of butter over medium heat. 2. Add the sliced bell peppers and mushrooms, sauté until tender. 3. Season with salt and pepper. 4. Toast the whole grain bread slices. 5. Butter the bread slices with the remaining butter. 6. Divide the sautéed veggies evenly on two bread slices. 7. Top with the remaining bread slices to form sandwiches. 8. Serve and enjoy!
