Steps
- Heat olive oil in a saucepan over medium heat. Add the Arborio rice and stir until lightly toasted, about 2 minutes.
- Gradually add the vegetable broth and scraping the bottom of the pan, stirring until the broth is absorbed and the rice is al dente, about 15 minutes.
- Remove from heat and stir in Parmesan cheese, parsley, salt, and pepper.
- Serve warm.
