Steps
1. Heat olive oil in a saucepan over medium heat. Add the Arborio rice and stir until lightly toasted, about 2 minutes.
2. Gradually add the vegetable broth and scraping the bottom of the pan, stirring until the broth is absorbed and the rice is al dente, about 15 minutes.
3. Remove from heat and stir in Parmesan cheese, parsley, salt, and pepper.
4. Serve warm.
