Korean Beer Chicken with Carrots and Potatoes

Steps

1. Start by heating some oil in a large skillet over medium-high heat. 2. Once the oil is hot, add the chicken breasts, season with salt and pepper, and cook until they are browned and cooked through. Remove the chicken from the skillet and set aside. 3. Add the garlic and carrots to the skillet and cook until they are tender, about 5 minutes. 4. Add the potatoes and cook for an additional 5 minutes. 5. Add the beer and bring to a simmer. 6. Add the chicken back to the skillet and cook for another 10 minutes or until the sauce has reduced and thickened. 7. Serve warm with a side of fresh sliced scallions, if desired.
