Korean Egg Carrot Stir-Fry

A delicious and simple Korean-inspired egg carrot stir-fry that is easy to make and can be made in less than 20 minutes, with minimal ingredients. Perfect for lunch or dinner when you're short on time!

Steps

1. Grease a skillet with olive oil or butter and heat over medium heat. 2. Add eggs to the skillet and scramble for 2 minutes until nearly cooked through. 3. Cook for another 2 minutes until the eggs and carrots are lightly browned. 5. Serve stir-fry over rice or quinoa and enjoy!
