Steps
1. Grease a skillet with olive oil or butter and heat over medium heat.
2. Add eggs to the skillet and scramble for 2 minutes until nearly cooked through.
3. Add carrots, garlic, and ginger to the skillet. Stir and cook for 1 minute until fragrant.
