Steps
1. Heat the olive oil in a medium size pot over medium-high heat.
2. Add the onions and cook until they are translucent.
3. Add the vegetarian chicken and cook until lightly browned.
4. Add the carrots and potatoes to the pot and mix until everything is evenly coated.
5. Add 1 cup of water and cover the pot. Increase the heat to high and bring to a boil.
6. Reduce the heat to low and simmer, covered, for 15 minutes or until the vegetables are cooked through.
7. Remove the pot from the heat and season with salt and pepper to taste. Serve and enjoy!
