Steps
1. Heat vegetable oil in a skillet over medium heat.
2. Add the chopped onion and garlic, sauté until fragrant and translucent.
3. Push the onion and garlic to one side, crack eggs into the skillet and scramble until just cooked.
4. Add the cooked rice and frozen peas and carrots to the skillet, mixing everything well.
5. Pour in soy sauce and stir fry for 3-4 minutes, ensuring all ingredients are heated through.
6. Season with salt and pepper to taste.
7. Garnish with chopped green onion if desired and serve hot.
