Fajita Rice Bowls

An easy and tasty meal that could feed one or a whole family - fajita rice bowls! Loaded with the flavors of chicken, garlic, onions, and peppers.

Steps

1. Begin by heating the olive oil in a large non-stick skillet over medium heat. 2. Add the chicken cube to the skillet and season with garlic and a pinch of salt and pepper. Sauté the chicken for 2-3 minutes until it is golden and cooked through. 3. Add the chopped onions and peppers to the skillet and sauté for 3-5 minutes until softened. 4. Sprinkle in the rice and tomato sauce and combine with the rest of the vegetables. 5. Pour 1 cup of water into the skillet and bring it to a gentle boil. 6. Reduce heat to low and cover skillet with a lid and let simmer for 18-20 minutes, or until rice is fully cooked. 7. Serve the rice and vegetables into a bowl and enjoy!
