Steps
1. In a blender, combine the ripe banana, rolled oats, almond milk, baking powder, cinnamon, vanilla extract, and salt. Blend until smooth.
2. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or coconut oil.
3. Pour about 1/4 cup of the batter onto the skillet for each pancake.
4. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
5. Serve warm with your favorite toppings like fresh fruit, yogurt, or maple syrup.
