Fried Tilapia with Corn Salsa

Steps

1. Start by heating the oil in a small skillet over medium heat. 2. Season the tilapia fillets with the paprika, garlic, salt and freshly squeezed orange juice; 3. Fry the seasoned tilapia fillets until golden, around 5 minutes per side. 4. Remove the fish to a plate and add the salsa con maiz to the pan and simmer for another minute. 5. Place the cooked fish on individual plates and top with the salsa. 6. For the avocado salsa: add the diced avocado, lime juice and a pinch of salt in a small bowl and mix until combined. 7. Top the fish with the avocado salsa and freshly shaved Parmesan (optional).

For 1 person: -2 small tilapia fillets; -1/4 cup salsa con maiz; -1/4 cup freshly squeezed orange juice; -1 tablespoon olive oil; -1 teaspoon garlic, minced; -1/4 teaspoon paprika; -Salt to taste; -1 avocado, peeled and diced; -1/2 lime, juiced; -Freshly shaved Parmesan (optional).
