Steps
1. Cook quinoa according to package instructions and let it cool.
2. Dice the cucumber and halve the cherry tomatoes.
3. In a bowl, combine the cooled quinoa, cucumber, tomatoes, parsley, and mint.
4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
5. Pour the dressing over the salad and toss gently to combine.
6. Sprinkle crumbled feta cheese on top if using.
7. Serve chilled or at room temperature.
