Steps
1. Season the chicken breast with salt and pepper.
2. In a medium-sized skillet, heat the olive oil over medium heat.
3. Add the chicken breast to the skillet and cook for about 6-8 minutes on each side, or until cooked through.
4. Remove the chicken from the skillet and set it aside to rest.
5. In the same skillet, add the minced garlic and diced onion. Sauté until fragrant and the onion becomes translucent.
6. Add the diced tomato to the skillet and cook for a few minutes until it starts to soften.
7. While the tomato cooks, prepare the rice according to the package instructions.
8. Once the tomato has softened, return the chicken breast to the skillet and cook for an additional 2-3 minutes to allow the flavors to meld together.
9. Serve the chicken, garlic, and tomato mixture over a bed of fluffy rice.
