Garlic Butter Baked Potato with Creamy Boiled Egg Mash

A comforting baked potato topped with a rich garlic butter and creamy boiled egg mash. This simple yet flavorful dish combines the earthiness of potato with the smooth texture of eggs mixed in herbed garlic butter.

Steps

1. Preheat the oven to 400°F (200°C). 2. Pierce the potato several times with a fork and bake directly on the oven rack for 45-50 minutes until tender. 3. Meanwhile, place the eggs in a pot and cover with water. Bring to a boil, then simmer for 10 minutes. Remove eggs and place in cold water, then peel. 4. In a small pan, melt butter over low heat. Add minced garlic and cook gently for 1-2 minutes until fragrant. Remove from heat. 5. Once the potato is baked, cut it in half lengthwise and scoop out the inside into a bowl. 6. Mash the potato with garlic butter, then chop the boiled eggs and fold them into the mixture. Season with salt and pepper. 7. Spoon the mixture back into the potato skins. Sprinkle with parsley if using, and serve warm.
