Steps

1. Cook the white rice according to package instructions and set aside. 2. In a small bowl, mix lemon juice into the cooked rice and set aside. 3. Heat margarine in a skillet over medium heat. 4. Add minced garlic and sauté for 1 minute until fragrant. 5. Add shrimp to the skillet, season with salt and pepper. 6. Cook shrimp for 2-3 minutes on each side until pink and cooked through. 7. Serve shrimp over lemon rice. 8. Garnish with fresh parsley if desired.
