Steps
1. Heat the oil in a large skillet over medium-high heat.
2. Add the chicken breast and cook for 5 minutes, flip and cook for another 5 minutes.
3. Once chicken is cooked through, remove from pan and set aside.
4. Add onions, carrots, and tomatoes to the skillet. Saute for 3-4 minutes.
5. Add in minced garlic and cook for 1 minute.
6. Add the cooked chicken back into the skillet and season with salt and pepper.
7. Stir everything together to combine and cook for an additional 3-4 minutes until vegetables are tender.
8. Serve over rice or pasta, if desired. Enjoy!
