Steps
1. Preheat the oven to 400°F (200°C).
2. In a bowl, beat the eggs and season with salt and pepper. Dip the chicken breast into the beaten eggs to coat.
3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sliced onions. Sauté until fragrant and onions are translucent.
4. Push the onions and garlic to one side of the skillet and add the chicken breast. Cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
5. In the same skillet, add another tablespoon of olive oil and the cubed potatoes. Season with salt and pepper. Cook until the potatoes are golden brown and crispy, stirring occasionally.
6. Transfer the cooked chicken and potatoes to a baking dish. Place in the preheated oven and roast for 15-20 minutes, or until the potatoes are tender.
7. Serve the garlic chicken with roasted potatoes and enjoy!
