
Steps
- Preheat the oven to 400°F (200°C).
- In a bowl, beat the eggs and season with salt and pepper. Dip the chicken breast into the beaten eggs to coat.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sliced onions. Sauté until fragrant and onions are translucent.
- Push the onions and garlic to one side of the skillet and add the chicken breast. Cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and the cubed potatoes. Season with salt and pepper. Cook until the potatoes are golden brown and crispy, stirring occasionally.
- Transfer the cooked chicken and potatoes to a baking dish. Place in the preheated oven and roast for 15-20 minutes, or until the potatoes are tender.
- Serve the garlic chicken with roasted potatoes and enjoy!
