Steps
1. Cook the pasta according to package instructions until al dente, then drain and set aside.
2. In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 2-3 minutes.
3. Add the minced garlic to the skillet and cook for another minute until fragrant.
4. In a bowl, whisk the eggs and season with salt and pepper.
5. Reduce the heat to low, add the cooked pasta to the skillet, and pour the beaten eggs over the pasta. Toss quickly to combine, cooking until the eggs are just set, about 2-3 minutes.
6. Serve immediately, garnished with chopped fresh parsley if desired.
