Garlic Ginger Chicken

Steps

1. Season the chicken breast with salt and pepper. 2. In a pan, heat the vegetable oil over medium heat. 3. Add the minced garlic and grated ginger, and sauté for a minute until fragrant. 4. Add the sliced onion and cook until softened. 5. Push the onion to the side of the pan and add the chicken breast. Cook until browned on both sides. 6. Add the diced tomatoes and cook for a few more minutes until the tomatoes are soft and the chicken is cooked through. 7. Serve hot with steamed rice or your choice of side dish.
