Steps
1. Preheat the oven to 400°F (200°C).
2. In a bowl, mix the olive oil, minced garlic, thyme, salt, and pepper.
3. Place the chicken breast in a baking dish and coat it with the garlic herb mixture.
4. In the same bowl, add the sliced carrots, diced potatoes, and chopped onion. Toss with any remaining olive oil mixture.
5. Arrange the vegetables around the chicken in the baking dish.
6. Roast in the preheated oven for 25-30 minutes, until the chicken is cooked through and the vegetables are tender.
7. Let it rest for 5 minutes before serving.
