Garlic Herb Roasted Potatoes

These garlic herb roasted potatoes are crispy on the outside, tender on the inside, and bursting with flavor from the herbs and garlic. A perfect side dish for any meal!

1. Preheat the oven to 400°F (200°C). 2. Wash and dice the potato into small cubes. 3. In a bowl, mix the diced potatoes with olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper until well coated. 4. Spread the potatoes in a single layer on a baking sheet. 5. Roast in the oven for 30-35 minutes or until the potatoes are golden brown and crispy. 6. Serve hot and enjoy!
