Steps
1. Season the chicken breast with salt and pepper.
2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
3. Add the chicken breast and cook until browned and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
4. In the same skillet, add the remaining tablespoon of olive oil.
5. Add the minced garlic and diced onion. Sauté until the onions are translucent and the garlic is fragrant.
6. Meanwhile, cook the rice according to package instructions.
7. Slice the cooked chicken breast into strips.
8. Serve the garlic onion mixture over the cooked rice, topped with the sliced chicken.
