Steps
1. Preheat oven to 375°F (190°C).
2. Carefully butterfly the chicken thigh by slicing horizontally to open it like a book.
3. In a small bowl, mix minced garlic, grated Parmesan, chopped parsley, salt, and pepper.
4. Spread the garlic Parmesan mixture evenly inside the chicken thigh and fold it back.
5. Heat 1 teaspoon olive oil in an oven-safe skillet over medium-high heat.
6. Sear the stuffed chicken thigh for 3-4 minutes on each side until golden brown.
7. Transfer the skillet to the oven and bake for 20 minutes until the chicken is cooked through.
8. While the chicken bakes, cook pasta according to package instructions until al dente.
9. Drain pasta and return to pot. Heat 1 tablespoon olive oil, sauté minced garlic until fragrant, then toss pasta in it.
10. Stir in fresh basil or parsley, season with salt and pepper, and toss well.
11. Serve the stuffed chicken thigh over or alongside the garlic herb pasta.
