Ginger Chicken Stir-Fry

Steps

1. Heat olive oil in a large skillet or wok over medium-high heat. 2. Add the chicken breast and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside. 3. In the same skillet, add the sliced carrot, corn kernels, minced ginger, and onion. Stir-fry for 4-5 minutes or until the vegetables are tender-crisp. 4. Slice the cooked chicken breast into thin strips and add it back to the skillet. Stir-fry for another 2-3 minutes to combine the flavors. 5. Season with salt and pepper to taste. 6. Serve hot and enjoy!
