Steps
1. Finely chop the shrimp and mix with grated ginger, salt, and pepper.
2. Spread the shrimp mixture evenly over one side of each bread slice.
3. Heat a non-stick pan over medium heat and melt the butter.
4. Place the bread slices shrimp-side down in the pan and cook until golden brown and shrimp are cooked, about 3-4 minutes.
5. Flip the bread and toast the other side for 1-2 minutes.
6. In a bowl, combine shredded carrot, olive oil, lemon juice, salt, and pepper to make the carrot slaw.
7. Serve the shrimp toast hot with the carrot slaw on the side.
