- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the goat cheese, halved grapes, salt, pepper, and thyme until well combined.
- Carefully slice the chicken breast horizontally to create a pocket.
- Stuff the chicken pocket with the grape and goat cheese mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
- Drizzle with balsamic glaze before serving.
