Grape and Goat Cheese Stuffed Chicken Breast

Steps

1. Preheat your oven to 375°F (190°C). 2. In a small bowl, combine the halved grapes and goat cheese, mixing well. 3. Carefully slice a pocket into the chicken breast, ensuring not to cut all the way through. 4. Stuff the chicken pocket with the grape and goat cheese mixture. 5. Season the outside of the chicken with olive oil, salt, pepper, and fresh thyme. 6. Place the stuffed chicken in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C). 7. Let it rest for 5 minutes before slicing and serving.
