Preheat your oven to 375°F (190°C).
In a bowl, combine goat cheese and halved grapes. Season with salt and pepper.
Cut a pocket into the chicken breast and stuff it with the goat cheese and grape mixture.
Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken breast on both sides until golden brown (about 3-4 minutes per side).
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
Let it rest for a few minutes, then garnish with fresh thyme before serving.
