Grilled Lemon-Herb Chicken Salad

Steps

1. In a small bowl, combine lemon zest, lemon juice, olive oil, parsley, thyme, salt, and pepper to create the marinade. 2. Place the chicken breast in the marinade and let it sit for at least 20 minutes. 3. Preheat the grill or grill pan to medium-high heat. 4. Grill the chicken for about 5-6 minutes on each side or until fully cooked and juices run clear. 5. While the chicken grills, prepare the salad by combining mixed greens, cucumber slices, and radishes in a bowl. 6. In a small jar, whisk together Dijon mustard, honey, white wine vinegar, and a pinch of salt and pepper to make the vinaigrette. 7. Slice the grilled chicken into strips once rested for 5 minutes. 8. Arrange the chicken on top of the salad and drizzle with the vinaigrette. 9. Toss gently and serve immediately.
