Steps
1. Preheat the grill to medium-high heat.
2. Clean and gut the mackerel, then pat dry with paper towels.
3. In a small bowl, mix together the lemon juice, olive oil, minced garlic, parsley, dill, salt, and pepper.
4. Brush the mackerel generously with the lemon herb mixture, both inside and out.
5. Place the mackerel on the grill and cook for about 4-5 minutes per side, or until the flesh flakes easily with a fork.
6. Remove the grilled mackerel from the heat and let it rest for a few minutes before serving.
7. Serve the grilled mackerel with a squeeze of fresh lemon juice and garnish with additional herbs, if desired.
