Grilled Mackerel with Lemon Herb Quinoa

Steps

  1. Rinse the quinoa under cold water and drain.
  2. In a small pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. While the quinoa cooks, preheat a grill or grill pan over medium heat.
  4. Brush the mackerel fillet with olive oil and season with salt, pepper, and minced garlic.
  5. Grill the mackerel for about 4-5 minutes on each side, or until cooked through and flaky.
  6. Once the quinoa is cooked, fluff it with a fork and stir in lemon juice, parsley, salt, and pepper.
